A contemporary new food and drink hot spot will launch on Cheltenham’s Regent Street this November.

Open throughout the day and late into the evening, AquaVitae will invite visitors to eat, drink and share with fresh coffee and expertly crafted cocktails, carefully paired with a menu of grazing dishes and light bites.

Richard Davies, owner of AquaVitae, said: “We cannot wait to throw open our doors and share AquaVitae with everyone. It’s a concept that we have been working on for some time now and realising it has been a real journey. AquaVitae will be a place for people to make their own at any time of day – from morning coffee, corporate catch ups, light brunches and lunches, right through to after work cocktails with the girls and celebrating a special occasion into the early hours. We have a fantastic team behind the project who have worked tirelessly to bring the vision to life. Together we are really looking forward to welcoming our first guests in raising a glass to the future of AquaVitae.”

Richard Davies, esteemed owner of the legendary 21 Club, together with Ross Jones, will introduce AquaVitae to Cheltenham. Co-owner and General Manager Ross Jones, joins the partnership following 15 years of service in the Royal Marines. Ross brings a rich pedigree of hospitality experience from time spent at famed Tom Kerridge eateries, the Hand & Flowers and The Coach, together with positions at Raymond Blanc’s Le Manoir aux Quat Saisons.

AquaVitae, a Latin name, translates to “water of life”. True to its namesake, the innovative cocktail menu experiments with seasonal flavours and pushes the boundaries of classic favourites. Liquid Chef and Bar Manager Adam Barbury brings experience from his previous position at Raymond Blanc’s Brasserie Blanc.

Signature cocktails include the AquaVitae #1, a concoction of Ketel One vodka, fresh grapes, vanilla syrup and fresh basil, topped with soda, and the AquaVitae #100, a pitcher of calvados, dry sherry, apple syrup and prosecco, perfect for sharing. A decadent Vanilla Bourbon Milkshake is also a hero cocktail appearing on the menu.

For the morning after, diners can revive with a Smoked Bloody Mary and Orange Maria, sure to slay the cruellest of hangovers. Non-alcoholic drinks are also available and include the AquaVitae #0, a refreshing stir of fresh basil, grapes and soda water.

Head Chef Marc Davies leads the kitchen. He joins AquaVitae from Fosters Catering and time spent at Jamie’s Italian. AquaVitae’s grazing menu takes influence from the American appetizer style of eating. Dishes have been designed to compliment great conversation.

AquaVitae’s menu features flatbreads with a variety of toppings including blue cheese, pear and rocket, together with sliders of white fish, baby gem and tartare, and seared beef, Gloucestershire cheese and pickle, alongside lollipop lamb chops, antipasti sharing platters, shredded pork tacos, and sesame tuna tartare. A flaming crème brûlée and a dark and white chocolate moose cater for the sweet tooth.   

ShadowPlay Design have transformed the former Trapeze menswear building with fresh, vibrant interiors. AquaVitae’s extensive renovation has created a stylish space spanning two floors. The ground floor features a 10m metal topped bar, running to a theatre style kitchen at the rear. Exposed brickwork walls have been paired with bare and copper lighting, together with leather bonket seating and scaffold top tables. In the summer months and into the evening, outside seating will be available.

Adjoining the two floors, a poem exclusively written for AquaVitae is emblazoned on the stairwell walls in stark black and white contrast.

Upstairs has a unique feel separating it from the downstairs space. A hand-painted horse head mural provides a dramatic backdrop for the marble top bar. Sumptuous deep blue velvet bench seating and grey brass studded topped stools offer stylish perches for guests. 

AquaVitae’s upstairs Ciroc VIP Room is available for private hire, accommodating up to 40 people standing or 30 people seated. Its own bar and independent music system make it the ideal space for hosting intimate private parties, business meetings, events, private dining or special occasion celebrations.
